I love the Instant Pot’s ability to make shredded chicken so quickly and easily. In this recipe, I use the sauté and pressure cooker functions to make an easy to prepare, super flavorful dish: chipotle shredded chicken.

A couple of quick notes:
1) If you want to further reduce the carbs, the best place to cut back is with the onion.
2) Depending on the amount of sodium in your chicken stock/broth, you may want to dial back the salt in this recipe to 1 tsp. You can always add salt to taste later.
