Ceaser dressing:

4 anchovy fillets packed in oil, drained
3 small garlic cloves
2 egg yolks
2 tablespoons fresh lemon juice
1/2 tablespoon dijon mustard
2 tablespoons olive oil
1/3 cup of vegetable oil
1/2 cup finely grated Parmesan
ground black pepper
finishing sea salt

1) Fine chop 4 anchovy fillets and the garlic into a paste
2) Whisk in 2 egg yolks, lemon juice, and mustard.
3) Gradually whisk in olive oil and then vegetable oil. whisk until dressing is thick and glossy.
4) Whisk in Parmesan. Season with pepper, and more lemon juice, if desired.
5) Dress your salad with romaine lettuce, cheese, cherry tomatoes, and finishing salt.
