keto peanut butter mousse:

1 pint heavy whipping cream
4 tbsp natural peanut butter (no sugar or salt added)
1/4 – 1/2 cup powdered sugar-free sweetener
2 tsp vanilla extract
1/2 cup cocoa powder
pinch of fancy salt (Maldon or fleur de sel)

1) In a bowl, whip the cream until it starts to form peaks.

2) at this point add the sweetener, vanilla, cocoa powder, peanut butter and the pinch of salt. Beat until smooth. (If your peanut butter is salted, do not add the pinch of salt)
