One (or Two) Ingredient Cottage Cheese Chips Perfected - Consistent Results Every Time

A while back, The Keto Twins experimented with microwaving cottage cheese to make chips. While I wasn’t thrilled with how mine turned out, I was inspired to see if I could create a system of making these chips so that they would turn out perfect every time.

The recipe:
– Preheat oven to 225F (or 107C-110C).
– Using a food processor, process 1 cup (230g) of full fat cottage cheese until it’s the consistency of frosting.
– Portion into 12 future crackers on a baking sheet lined with parchment or a silicone mat. This works best with a #50 disher (linked below).
– Bake for 80 minutes, rotating the baking sheet at the halfway point, then turn off the oven and let the residual heat finish off cooking the crackers for 20 minutes.

Nut flour or pork rind panko: 1 TB
Keto Chow flavors: 1TB
Cheddar Powder: 1TB or more
Any type of seasoning: start with 1/2 tsp and adjust to your taste

Macros will vary based on brand of cottage cheese, but for a serving size of 6 crackers using the brand that I used and a #50 disher:
– 110 calories
– 5g fat
– 5g total carbs
-13g protein
